Char-grilled Mediterranean vegetable skewers

This is a recipe that varies depending upon what you have in your refrigerator and what is in season. The full combination includes 1 each large red, green and orange pepper; 1 large zucchini; 4 baby eggplants; and 2 medium red onions. Cut the vegetables into 1-inch pieces.

In a large bowl, mix 2 tablespoons lemon juice, 1 tablespoon olive oil, l crushed garlic clove, l tablespoon chopped, fresh rosemary plus salt and pepper. Add the vegetables and stir until coated. Thread vegetables on 8 skewers and grill for 10-12 minutes, turning frequently so they brown on all sides. Serve with cooked crack wheat and tomato/olive relish and you won’t even notice that the meal is meatless. Bon appetit!
