Sierra Originals – South Pine Cafe Nut Muffins

This muffin is way too delicious, a good thing considering this recipe makes four dozen.

Mix together:

3 cups oil

3 cups sugar

5 eggs

Mix together dry ingredients:

7 cups unbleached white flour

2 tablespoons baking powder

1 tablespoon baking soda

2 tablespoons cinnamon

1 tablespoon nutmeg

1 teaspoon salt

Then mix dry and wet together, adding 3 cups milk, 2 cups water, and 6 cups oatmeal. Add a quart of your favorite fruits. Spoon into muffin tins and sprinkle liberally with walnuts. Bake at 325 degrees for about 50 minutes. (The secret, here, says Dyer, is to bake longer, the more juicy the fruit, say strawberries, for example.)
