Whether or not you’re a vegetarian, this cookbook contains 101 “Quick and Easy Recipes,” and, unlike many cookbooks, they really are quick and easy.

A mother of eight who lives in the area, Vimala Rogers is a talented educator and motivational speaker.

Her colorful, beautifully illustrated cookbook is the result of years of experimentation with recipes. “Tips and Short Cuts,” at the beginning of every chapter, are priceless for the cook who really wants a healthy family.

Most of the preparation time is less than 30 minutes. She has included recipes by three of her children, Jean-Marie, Amanda and Sara.

You may not have all the ingredients but all are available in your local store. Tahari, sea salt, sesame oil, ginger root and tahini will crowd your shelves, but the results are worth it. Soups, salads, vegetables, main dishes, breakfast, beverages and desserts are included. “Killer Granola,” “Nutso Pesto,” “Aloha Salad” and “Tofu Skinny Dip” enliven the pages.

Although you do not have to be a vegetarian to cook and enjoy these recipes, they are geared to healthy living.

When Vimala’s son Matthew was enrolled in a Catholic school, the principal called his mother and reported the following:

“Yesterday all the new students had to fill in emergency forms. On the line, ‘religion,’ he had written ‘vegetarian.’ I told him vegetarianism was not a religion. He said, ‘You don’t know my mother very well.'”

This cookbook is on a stand in the SPD produce section.
