Homemade Rolled Porchetta Roast

This Saturday, while strolling around Downtown Grass Valley enjoying the Sierra Vintners’ Foothills Celebration, stop by Tess’ Kitchen Store to sample a melt-in-your-mouth delectable pork belly treat prepared by the store’s owner, Steve Rosenthal, using the Sous Vide method for a flavor experience unlike anything else. The Porchetta will be “sous vided” for 36 hours and then deep fried to give a great crisp crunch to the skin. You won’t want to miss this delectable treat!

Sous Vide (pronounced “sue veed”) is the newest cooking trend that has swept the nation. It is a method which involves cooking food in vacuum-sealed plastic bags in hot water, and the low, slow cooking results in perfectly done and juicy results every time.

If you are interested in learning this new cooking method, you are in luck! Rosenthal himself will be teaching a class titled “Sous Vide in the Spring with Steve” at 5 p.m. on Saturday, March 26. He will demonstrate how amazing, simple, and versatile this method is, and then teach the class how to Sous Vide a porchetta, asparagus, and crème brulee for dessert.

Did you know that Tess’ now offers wine? Rosenthal has added a selection of wines from around the world chosen specifically to pair perfectly with different foods and palates. Wine expert Dawn Empson will offer several classes throughout the spring to help students discover their own wine palates, learn how to pair wine and food properly, and explore different wines from around the world.

Exciting new wine classes at Tess’ this spring include “Wine and Food Pairing” at 7 p.m. on Tuesday, March 29, and “Discover your wine palate” at 6 p.m. on Friday, Apr. 8. A “Wines of the World” class will be offered at 1 p.m. on both Apr. 9 and 23, and “Viva La Vino: Varietal Comparison on Cabernet Sauvignon” will take place at 6 p.m. on Friday, Apr. 22.
