Nevada City brewery taps support for startup costs

Developers of a budding Nevada City bakery and microbrewery focused on local ingredients are looking to tap investors through an online funding campaign that launched Wednesday night, less than six months before it is slated to open.

“The cost of this kind of a project is pretty enormous, as you might imagine,” said David Cowie, the brewer half of Three Forks Bakery and Brewing Company, which will occupy 232 Commercial St.

The business will share a parking lot with the former Bank of America building that now houses the Nevada County District Attorney’s Office.

Shana Maziarz, former producer of the South Yuba River Citizens League annual Wild & Scenic Film Festival, will run the bakery as Cowie’s partner.

“We got most of our funding, besides the two of us, from private investors,” Cowie said. “We feel confident that we are going to be close. But at the same time, to give us the best chance for success, we want to make sure we aren’t undercapitalized.”

Three Forks Bakery and Brewing Company is named after the three forks of the Yuba River with a play on dining utensils (salad, entree and dessert).

While the restaurant will function as a bakery in the morning, replete with coffee, loose-leaf teas and espresso drinks, it will transform into a lunch and evening restaurant with wood-fired pizza and a seven-barrel microbrewery on site.

“Our vision for our restaurant is we see it as more than just feeding people good food, we also see it as a way of really nurturing our community, and we really see food as revolutionary,” Maziarz said in a video on Three Forks’ fundraising website.

“How we choose to eat and how we choose to spend our money has a really, really incredible impact on how we live on this planet.”

Three Forks is seeking $30,000 through Kickstarter, an online crowd-funding platform.

“Kickstarter is a way to get us over that hump, to give us an extra cushion, but also to give a lot of people, who have been really excited and supportive of the project, an opportunity to be a part of it,” Cowie said.

“Whether it’s $25 or whatever. It’s kind of a dual-purpose campaign.”

While Cowie and Maziarz focus on the business, building owner Gary Tintle, who also owns the conjoined Alpha Building where the brewery was originally envisioned to be housed, focuses on the renovation.

Tintle, a contractor, and his crew are working on the exterior of the building and awaiting a city permit for the interior work, which he said he expects within a couple of weeks.

“It’s coming along pretty well. Everything on the outside is custom. Things will start looking better once some of those pieces arrive,” Tintle said.

If all goes according to plan, Tintle and Cowie are aiming for a summer opening.

“It takes a while to be brewing before we can open the doors,” Cowie said.

“In a perfect world, we would start brewing in April. That gives us a couple months of brewing and we could open to the public in early June. Realistically, it might delay from that, but we still think it is reasonable to expect we could open in the summer and good-weather months.”
